  • 4 slices bacon, diced
FOR THE SAUCE
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried basil
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • salt and fresh ground pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 2 cups baby spinach
  • fresh chopped parsley, for garnish

Instructions
FOR THE PORK CHOPS
  1. Heat olive oil over medium-high heat in a large skillet.
  2. Season pork chops with salt and pepper; add to skillet and cook for 5 to 6 minutes per side, or until golden brown and edges are crispy. Cooking time depends on the thickness of the pork chops.
  3. Remove pork chops from the skillet; set aside and keep covered.
  4. Add bacon pieces to the skillet and cook until crispy.
